*ingredients:
°1 tbsp. olive oil (divided).
°1 pound Italian sausage.
°1 c. salt.
°freshly ground pepper.
°1/2 cup of red, yellow and orange bell peppers.
°1/4 cup chopped onion.
°2 minced garlic cloves.
°1 c. Italian seasoning.
°1/2 tsp. Red pepper flakes.
°1/2 cup of white wine.
°1 can (28 ounces) chopped tomatoes (undrained).
°2 tbsp. Chopped fresh parsley.
°12 oz. Egg noodles.

*Directions:

In a large skillet, heat half the olive oil and brown the Italian sausage. Once it’s brown, set the sausage aside.
In same skillet, heat the rest oil. Sauté onions, peppers and garlic to fragrant. It usually takes about 3 mn.

Pour the white wine into the pan and simmer until it has almost completely evaporated, allowing the flavors to enhance and concentrate.

Add the diced tomatoes, Italian seasoning, red pepper flakes, and salt and pepper. Leave this mixture to simmer for about 10 minutes until the flavors meld and the sauce thickens slightly.

Return the browned Italian sausage to the skillet with the chopped parsley. Mix well until sausage and parsley are combined
