Chocolate Rice Krispie Balls

Quick and easy to make with 4 ingredients, these chocolate Rice Krispie balls are a delicious crunchy sweet treat that kids of all ages will love!

So, I’ll be honest, Easter snuck up a little on me this year! If it’s the same for you, then these chocolate Rice Krispie balls will save the day! And, let’s be honest, chocolate at anytime is never a bad idea!

Super simple and easy to make, these Rice Krispie bites come together quickly for a crunchy sweet treat that everyone will love!

Ingredients

  • Chocolate: I used semi-sweet chocolate for this recipe, but you can use dairy, dark or white, whatever takes your fancy!
  • Vanilla Extract: For sweetness and flavor.
  • Mini Marshmallows: These act as a glue to hold everything together. Mini marshmallows are quicker to melt, but larger ones will work if that’s what you have.
  • Rice Krispies: For that perfect crunchy bite! You can also make these with other cereal, like cornflakes, if you prefer.

How to make chocolate Rice Krispie balls

  • Melt the chocolate and stir in the vanilla extract (photo 1).
  • Stir in and melt the marshmallows (photo 2).
  • Stir in the Rice Krispies, roll into balls and chill to set (photo 3).

Frequently Asked Questions

How long do they keep?

These Rice Krispy chocolate balls are best enjoyed within a couple of days. They will keep well for longer, up to 5 days, but the texture won’t be as soft.

Once set, store them in an airtight container at room temperature with the layers separated with parchment. You can store them in the fridge, but it’s best to let them warm up to room temperature before enjoying to allow them to soften a little.

Can you freeze them?

Yes, these freeze well and will keep for up to 3 months. Wrap each ball in parchment or plastic wrap and place in a freezer bag. Allow to thaw at room temperature before tucking in.

Recipe Notes and Tips

  • Take care when melting the chocolate and marshmallows. Do it on a low heat stirring regularly so that the chocolate doesn’t burn.
  • Allow 15 to 20 minutes for the balls to set in the fridge.
  • Store at room temperature.
  • Make smaller or larger balls if you prefer. Each of these balls is made with around 4 tablespoons of the mixture.

Chocolate Rice Krispie Balls

Ingredients

  • 8 ounces semi sweet chocolate (225g)
  • ½ teaspoon vanilla extract
  • 2 cups mini marshmallows
  • 2 cups Rice Krispie cereal

Instructions

  • Melt the chocolate slowly on a low medium heat in a heavy bottomed pot.
  • Stir in the vanilla extract once melted.
  • Add in the mini marshmallows, stir to combine with the melted chocolate until fully melted.
  • Take off of the heat and mix in the Rice Krispies.
  • Form six balls with the mixture and press firmly together.
  • Place on parchment paper and allow to set in the fridge.
